Serving the traditional cuisine of New Orleans, Louisiana
The cuisine of New Orleans is the original fusion food and formed from the influence of French, Spanish and Italians as these cultures colonised, lived and traded in Louisiana. The flavours were further developed with spices introduced by people of colour from Africa and the Caribbean brought over as slaves and trading with Native American Indians making a style of food and cooking unique to anywhere else in the world.
Historically a key aspect was to use as much of the vegetables and animals as possible to minimise waste and maximise flavour. This kind of sustainable practise is something that we emulate at The Moldy Fig. Every dish is crafted by us from beginning to end with all stocks and sauces made in house and produce sourced locally from Preston Markets. Our eggs, chicken and pork are free range and all seafood is sourced with sustainable practices from Tasmania.
We believe in making it easy for anyone to dine out and this was an important consideration when constructing our menu. That means lots of tasty vegetarian and vegan options and sticking with the traditional methods of cooking with corn flours to keep the menu highly accessible for gluten and dairy free diners.
